Fantastic refreshing dessert for hot days, easy to prepare and quickly ready. However, it must stay in the freezer longer in order to obtain the desired hardness. Follow recipe.
Ingredients: cup in UK measures, work time:25 min, 5–6 hours standing in freeze
1 cup (2 sticks) melted butter
1 cup packed brown sugar
3/4 cup sugar
1/4 cup milk (preferably whole or 2%)
1 tsp pure vanilla extract
2.5 cup all-purpose flour
1 tsp kosher salt
1.5 cup Mini chocolate chips
3 qt. vanilla ice cream/ softened
Preparation:
Line a large baking tray with baking paper.
In a large bowl, stir in the melted butter, both sugars, milk and vanilla until well combined. Stir in flour and salt, then stir in the chocolate pieces.
Press the cake batter with your hands in the prepared casserole to flatten it as much as possible, a cutting board can help.
Then put the baking paper on the dough and knead it a bit, and leave it in the freezer for 1 hour until it hardens.
Take the cookie dough out of the mold and place it on a cutting board.
Cut the dough in half.
Take out the vanilla ice cream on one half, and then gently place the other half of the cookie dough on top.
Transfer back to the pan and freeze for at least 4 hours and until overnight.
Cut into sandwiches and serve.
