Chocolate Muffins with Coconut Filling Lena

  • Since I am a big fan of coconut, here is a recipe for easy and simple, just when you want to make it quickly and sweeten it well and feel the bounty variant of chocolate. I love that coconut filling the most, which is divine and gives a real taste to this muffin. Try it yourself, it's very simple. Follow recipe.

Ingredients: simple, total time: 50 min.

Chocolate dark part:

  • 280 g of flour

  • 1 sachet of baking powder/ 10 g

  • 1/2 teaspoon baking soda

  • 4 Tablespoons cocoa

  • 1 egg

  • 140 g of brown sugar

  • 80 g of softened butter

  • 300 ml of liquid yogurt

Muffin Heart Fill:

  • 150 g milk spread

  • 100 g of coconut

  • 2 Tablespoons powdered sugar

  • 1 sachet of vanilla sugar/ 10 g

For the top of the muffin:

  • 100 g of cooking chocolate

  • 2 Tablespoons milk

  • 80 g of butter

  • coconut

  • chocolate crumbs

Preparation:

Prepare muffin heart filling:

  1. Mix the milk spread, powdered sugar, vanilla sugar and coconut flour well with a mixer, and make 24 balls from this mixture. Set aside.

Chocolate dark part:

  1. Mix flour, cocoa, baking powder and baking soda in one bowl.

  2. In another bowl, beat together: eggs, brown sugar, butter and liquid yogurt, and gradually add the flour mixture with cocoa.

Processing:

  1. Put the baskets in the muffin tins. Fill with half of the dark cream, then press the prepared white ball into the middle of each basket, cover with a part of the chocolate dark part.

  2. Bake them for 25 minutes at 180 °C.

Chocolate Glaze:

  1. While cool, make a chocolate glaze. Dip the top of each muffin into the chocolate glaze, allow it to set slightly, and sprinkle with a mixture of coconut flour and chocolate crumbs.
