Beautiful chicken with rice in tomato sauce and fragrant basil. It is a simple way to prepare and not difficult. Try it, and you will be amazed at how delicious it is! Follow this excellent recipe.
Ingredients: easy, preparation time: 10 min., total time: 1 h, 6 servings
6 chicken thighs/ with bone and skin
1 Tbsp olive oil
3 cloves garlic/ finely chopped
1 onion/ finely chopped
1 red bell pepper/ diced or coarsely blended
20 g sun dried tomato strips in oil/ chopped
1 tsp ground red pepper
350 g rice/ rinsed
400 g tin crushed tomatoes/with juice
430 ml chicken broth /or cube for soup+ water
1 tsp of salt
2-3 tsp dry spice/ Vegeta- for seasoning chicken
1 tsp pepper
1 tsp dried basil
6 g fresh basil leaves/ chopped
1 Tbsp fresh parsley/ finely chopped
extra chopped fresh basil for serving
Preparation:
First prepare all the vegetables as described, wash and dry the chicken well.
Season the chicken on all sides with salt, pepper, and dry spice/Vegeta.
Preheat the oven to 200 C while cooking the chicken on the stove.
Pour the oil into a steel and deep pan (which can go in the oven) and wait for it to heat up.
Put the seasoned chicken and fry on high heat on both sides until it gets a golden brown color.
Turn each thigh and fry until golden. When done, place on a plate.
Add the finely chopped onion, fry it for a 1–2 minutes. Then add the garlic and fry it for about 30 seconds until it releases the smell, add the red peppers and fry for about 3–5 minutes until the onion gets a yellowish color.
Then mix dried tomatoes, rice, crushed tomatoes. Cook for about 10 minutes, then add hot broth, season to taste (with salt, pepper, basil, and red ground pepper).
Allow the rice to boil to soften and absorb the tomato juice.
Then put the chicken thighs so that their skin is on top. Bring to the boil and, if necessary, turn the chicken into tomato sauce.
When it has boiled, turn off the heat and cover with aluminum foil, put it in a preheated oven to bake for about 40 minutes, until the rice softens and absorbs the liquid, and until the chicken cooked.
Add another 60-70 ml of water to the rice as needed if the rice not fully cooked.
After 30 minutes, remove the aluminum foil and bake for another 10 minutes, until they are crispy and golden.
Sprinkle with finely chopped parsley and freshly chopped basil and serve. Buon appetito!
