Simple preparation of Mexican tacos with chicken meat in sauce. Irresistibly tasty with small doses of spiciness. An ideal meal for those who don't have much time. Follow the recipe.
Ingredients: simple, total time: 35 min, 4 serving
700 g chicken thigh/ chopped into small thin pieces
1.5 Tbsp olive oil
2 Tbsp tomato paste
2 tsp sugar
230 ml chicken broth/ separated
Taco Marinade:
3 Tbsp lime juice
1 Tbsp olive oil EVO
2 garlic cloves/ finely chopped
2 tsp each /garlic powder, onion powder, dried oregano
3 tsp each/ cumin powder, and paprika
1/2 tsp cayenne pepper/ optional
1 tsp salt
1 tsp black pepper
2 Tablespoon chicken broth
For Tacos additions:
Taco shells/ or tortillas
diced tomatoes to taste
shredded lettuce
shredded cheese/ Edam, Cheddar, Trappist
sour cream
Preparation:
Put all the ingredients for the marinade in a deep bowl, add 2 tablespoons of chicken broth and stir to combine well.
Toss the chicken in the spice mixture. It must be covered from all sides.
Take a larger pan, fry the chicken meat in olive oil for about 5 minutes on each side on moderate heat.
Remove the chicken to a shallow plate.
Cook on moderate heat, in the same pan add chicken broth, tomato paste, sugar and add the rest of the marinade.
Meanwhile, chop the chicken with a knife.
Return the chicken to the sauce, cook for 10 minutes, until the sauce thickens.
Check the taste, add spices as needed.
Serve with taco shells, cover with sauce, add chicken meat, the best spread is focaccia, sour cream, and toppings are tomato, onion, coriander, and salad.
