Almond Dough:
200 g of flour
100 g of butter
pinch of salt/ 2 g
75 g of powdered sugar
25 g of almond powder
1 egg
Cream:
1 egg
120 g of sugar
100 g of sweet cream
25 g of corn starch
1 bag of vanilla sugar/ 8 g
450 g of cherries
Preparation:
Prepare Sweet Almond Dough:
Beat eggs with sugar, add ground almonds, a little salt, then add butter that has been at room temperature and mix well. Gradually add flour, form a ball, knead the dough with your fingertips, it must remain crunchy and inelastic, put in the refrigerator for 30 minutes.
Coat the mold, put the dough and shape it according to the mold. Bake for 10 minutes at 175 °C.
While the dough is baking, prepare the cream mixture:
Cream:
Beat the egg with sugar, then add fresh cream and cornstarch and vanilla sugar. Put everything in a medium saucepan and cook on a slightly moderate heat until the mixture thickens. The mixture must be compact. Pour this cream over the dough and arrange the cherries.
Bake for 45 minutes at 175° C.
When the cake is ready, smooth the cake to some fruit jelly, which you love. Serve. Buon appetito!
