Cardamom Buns Pastry

  • This pastry is traditional and comes from Sweden, the dough is soft and delicious with the addition of cardamom. Follow recipe.

Ingredients: medium, total time: about 3h

Dough:

  • 620 g flour 00

  • 300 ml warm milk

  • 2 eggs

  • 1 bag of dry yeast 10 g/ or fresh yeast 30 g

  • 1 teaspoon sugar

  • 2 teaspoon cardamom

  • 2 teaspoon salt

  • 1 teaspoon of finely grated orange peel

  • 50 g butter at room temperature

  • 50 g lard

  • 50 g of granulated sugar

Filling:

  • 50 g butter at room temperature

  • 100 g brown sugar

  • 3 teaspoon ground cardamom

Decoration:

  • 100 g of orange jam

  • 50 g sugar sprinkles/ or sliced almonds

Preparation:
  1. Put the yeast in 150 ml warm milk add 1 tsp of sugar and 1 tsp flour, let it rest for 15 minutes.

  2. Pour the milk, butter, fat, sugar, salt, cardamom and orange zest into a medium saucepan and stir over low heat until the fat has melted.

  3. Pour the liquid into a deep mixing bowl, gradually add the flour. Mix until you form a sticky dough.

  4. Knead on medium-low speed for 5 minutes, until the dough starts to separate from the bowl and become a smooth.

  5. Place the dough in a buttered bowl and cover with plastic wrap. Leave in a warm place until the dough doubles in size.

  6. After that, roll the dough into a large rectangle and spread it with softened butter, then sprinkle with a mixture of brown sugar and ground cardamom.

  7. Fold the dough into thirds, like for a business letter. Roll out the folded dough to get a larger rectangle, then cut into 24 strips.

  8. Twist the two strips of dough together, then wrap the twist around your hand once. Tuck the end under and tuck it into the middle to create a bun.

  9. Let the buns rest for 20–30 minutes.

  10. Bake at 200 °C for about 15–20 minutes, turning the pan from one side to the other. When they are ready, spread them with marmalade or use sugar sprinkles or sliced almonds.
