Ingredients: 24 pieces, total time: 70 min, standing dough 30 min in refrigerator
cookie cutter 5 cm in diameter
and one smaller mold 2 cm in diameter
380 g of flour
250 g butter or margarine
150 g of sugar
1 lemon peel/ grated
1 egg
3 vanilla sugar/ 30 g
50 g sugar powder
I used jam of plum, but you can also some other than apricot, peach strawberry that you prefer or have.
Preparation:
Whisk butter 250 gr. with 150 g of sugar, 1 peel of lemon and 1 egg, first mix it well and then gradually add 380 gr. flour and maybe add more until the dough is gooey.
Transfer the dough to a board and finish mixing, spread with a rolling pin and remove the dough with a round mold 5 cm in diameter. The dough must be 4-5 mm thick.
Calculate exactly how many biscuits you have in total by taking out the second part of the dough with a finger circumference model 2 cm, to be in pairs. And arrange in a baking tray to bake quietly at 160 °C, for 15 min. (it must not turn brown but to be more whitish).
And so you put it right. They will be good, even softer in 1–2 days.
You can dust them with powdered sugar.
