Beetroot in Jars for Winter

  • Many housewives in Serbia prepare winter food at the beginning of autumn, at the end of summer, because in this way they save a lot on all food items. It may or may not to be a big deal, it all depends on how much you use. One of those winter foods is beetroot salad, which is prepared in an easy and quick way, and for that you will need sterile jars and sterile caps and, of course, a little willpower. Follow recipe.

Ingredients: simple, total time: 70 min.
  • 2 kg of beets

Pre-salt:

  • 1 liter of water

  • 270 ml vinegar

  • 2 Tbsp of sugar

  • 1 Tbsp of salt

  • peppercorns as desired

Preparation:
  1. Wash the beets well.

  2. Put the beets with their skins in the pan.

  3. Pour water over the beets in a pot and cook for about 40 minutes.

  4. While the beets are cooking, add the ingredients for the pre-salt in another pan. Cook until boiling.

  5. Peel the boiled beets and cut them into 4 mm thick sheets.

  6. Arrange in jars to the top.

  7. When the presalt is ready, pour it into the jars over the beets with the help of a ladle.

  8. Close with a sterile and new cap.

  9. Arrange the closed jars in a pan on which you have placed a thick cloth and pour water over them, not over the jars! Cook on low-moderate heat for 15 minutes to pasteurize them.

  10. Store in a dark place in the pantry.

  • If you need a larger amount for the winter, just increase the food.
