Beans in the Serbian way, my recipe. I always make that way, it is very tasty, and they are looking for more. We are used to eating it stewed in Serbia, but here in Italy they combine it with dough especially for beans, and it is very tasty. Follow recipe.
Ingredients: medium, total time: 2h and 30 min. 6 servings
300 g white beans or brown beans
1 onion/ finely chopped
4 clove garlic/ finely chopped
2 carrots/ cut into rings
2 primrose roots/ finely chopped
1 parsley leaves/ finely chopped
1 hot pepper
50 g bacon/ diced
200 g dried sausages/ cut into rings
1 teaspoon salt
1 Tablespoon dry spice (herbal)
2 Tablespoon flour
1 Tablespoon sweet ground paprika
1 teaspoon hot pepper
Preparation:
Wash the beans, put them in a deep pot and pour about a liter of cold water over them, and then put them to cook for about 20 minutes, during which time prepares the other ingredients.
To prepare the beans, peel and finely chop the onion. Peel and chop 2 cloves of garlic, peel the carrot and the root of the primrose, wash and cut into cubes, and wash the hot pepper, peel it from the seeds and finely chop.
Cut the bacon into cubes and the sausage into rings.
(You need the primrose leaf and the remaining two cloves of garlic for later.)
When you have cooked the beans, strain them and pour the new water in which they were cooked.
Return the drained beans to the deep pot and pour it with 2 liters of cold water, add the prepared ingredients: onion and garlic, hot pepper, carrot and primrose root, bacon, and sausage. So put the beans on low heat to cook for an hour and a half to two hours.
The beans are ready when the beans soften but remain whole.
Pour about a liter of hot water into the prepared beans, after the water has boiled during cooking, then add salt and dry spice to taste and add finely chopped parsley leaves, then prepare the bean paste.
Prepare the bean powder in the following way:
Pour a little oil into a deeper pan, about 3–4 tablespoons, and add the finely chopped remaining garlic and put the oil to heat slowly. If the oil has warmed up, add two tablespoons of flour, mix it briefly, then add sweet and hot pepper and mix the mixture well. Pour the finished mixture into the beans, stir to melt the mixture, and cook the beans on low heat, stirring often for about 15–20 minutes, just to cook the flour from the mixture nicely.
Take care that your beans do not burn because they are thick.
Serve the prepared beans warm with a salad as desired or macaroni like Italians.
From the meat, you can also combine pork hoofs, ribs, knees cut into pieces, and dry ribs, in which case less salt is added. Buon appetito!
