Bean Stew with Dry Ribs

Ingredients: simple, total time: 2h and 45 min., 4 servings
  • 350 g of white beans

  • 3 large heads of onion/finely chopped

  • 3 cloves of garlic/finely chopped

  • 1 large carrot/cut into rings

  • 1 dry pepper, sweet or hot as desired

  • 1 Tablespoon of fat

  • 1 Tablespoon of white flour

  • 350 g of dry ribs, cut into pieces

  • 1 Cayenne pepper

  • 1 Tbsp peppercorns

  • ground pepper to taste

  • 2 bay leaf

  • salt to taste

  • 1 tsp dry spice/Vegeta

Preparation:
  1. Soak the cleaned and washed white beans in cold water in the evening and leave to soak overnight.

  2. In the morning, the beans are strained and poured with water again and put on the stove to boil. During this time, prepare the vegetables as described above. Sauté the onion in a spoonful of fat and add a little salt because it softens faster.

  3. Prepare 300 g of dry ribs. Dry ribs can be cut into pieces, they give an excellent aroma to the beans. (If you want meatier and richer stewed beans, cut into smaller pieces a medium-sized fresh smoked hanger or steak and put them in the beans. Gourmets who like a strong taste and rich stewed beans with dry ribs also chop 100 grams of dry bacon, which they fry just a little at the end of the slaw).

  4. When the beans boil, strain again. Put the stewed onion, prepared garlic, carrot, bacon, dry ribs or smoked hanger, a few peppercorns, bay leaf, chopped dry pepper into strips, boiled beans in a large pot. Then pour cold water over it so that it is at least twice as much, but beans and other things. Put the pot on the stove to boil, and cook on low heat until the beans are completely soft. After 1 hour, season with salt, pepper to taste, add 1 Tbsp flour.

  5. Cook for another 1 hour. In total, it should be cooked for at least 2 hours. Serve warm in plate. You can usually serve it cooked this way or with boiled potatoes or pasta. Buon appetito!
