Baked Ribs in the oven with Potatoes

  • I like to make baked ribs with potatoes at least once every 3 months, they always turn out tasty and juicy, and I prepare them this way. Follow recipe.

Ingredients: simple, total time: 90 min. plis 30 min. standing or overnight, 2 serving
  • 950 g - 1 kg pork ribs

Mixture:

  • 1 tsp of ground black pepper

  • 4 tsp of granulated garlic

  • 1/2 tsp of salt

  • 1 tsp red ground pepper-allspice

  • 1 tsp of red ground hot pepper

  • 1 Tbsp of mustard

  • 1 tsp of dry spice

  • BBQ Sauce

  • aluminum foil

  • Brush

If you don't have BBQ Sauce:

  • 2 Tbsp tomato paste

  • 1 Tbsp soy sauce

  • 1 tsp honey

For Potatoes:

  • 4 big potatoes/diced

  • 1 yellow fresh pepper/ diced

  • 2 sprig rosemary

  • 1 tsp red ground pepper

  • salt to taste

  • 1 tsp dry spice-Vegeta/ or to taste

  • 2 Tbsp oil/ or fat to taste

  • 150 ml hot water

  • Baking dish 20 × 20 cm/ or 25 × 25

Preparation :
  1. Mix all the dry ingredients for the ribs in a small bowl.

  2. Put the mustard in a small bowl. With the help of a brush, coat the ribs. If the ribs are whole and with skin-on top, you will bake them longer. You will remove the thin skin from the bottom side. Mine are torn to shreds.

  3. After mustard, apply the dry ingredients to the ribs, rub them well on all sides.

  4. Let them sit for 30 minutes, covered, or overnight.

  5. Peel the potatoes, remove impurities, wash them well and cut them into pieces.

  6. Pour a 2 spoon olive oil into a suitable container, add diced potatoes, diced yellow pepper, rosemary, teaspoon red ground pepper, little salt, teaspoon dry spice Vegeta, stir it all and add a 150 ml hot water, stir again.

  7. Brush now the ribs with BBQ sauce.

  8. Wrap the ribs in double aluminum foil. Before wrapping, pierce the lower part with a toothpick in a few places and lay it on the potatoes.

  9. Close well aluminum foil. I put double aluminum foil on the lower part under the ribs and only one layer of foil on top, do the same.

  10. Bake at 200 °C for 50 minutes.

  11. Remove from the oven, open the aluminum foil, coat with BBQ sauce again and continue baking for 15 minutes. Do not close aluminum foil.

  12. After a while, remove the dish again, turn the ribs to the other side, coat with a layer of BBQ sauce, return to roast for another 10 -15 minutes. Place the ribs on a plate, in the aluminum foil where the ribs were, cover with a little water, add to the potatoes, stir, and bake the potatoes for another 7-10 minutes.

  13. Serve warm dish with soup, and salad with a red wine.

NOTE:

  • If you have ribs in one larger piece and with a thicker skin on top, you will have to bake for about 2-3 hours, turning and coating with BBQ sauce and of course in foil as in this recipe.

  • My recommendation is to make the coating with mustard and dry ingredients the day before and leave it in the fridge overnight. With this method it's better for you because you'll have less work to do, and the taste of the ribs will be even better, because it has collected the smell and flavors of the ingredients.
