A wonderful and delicious apple roll ready in just 20 minutes. Follow the recipe.
Ingredients: simple, total time: 25 min.
Filling:
1 kg of apples/ cleaned and grated
100 g of raisins
100 g of coarsely ground walnuts
1/2 teaspoon of cinnamon
Biscuit for Roll:
5 eggs
5 Tbsp of granulated sugar
5 Tbsp of flour
1/2 teaspoon of baking powder
1 lemon peel grated/ optional
For Sprinkle:
1 teaspoon honey
2 teaspoon any jam
coarsely ground walnuts
or powdered sugar
Preparation:
Filling:
Soak the raisins in water for 10 minutes.
Grind the walnuts in a machine.
Wash a kilogram of apples well, peel them and remove hard parts and seeds, then grate them.
Then place them in a pan, add 3 spoons of granulated sugar and cinnamon to taste.
When the apples have released the liquid, add the ground walnuts and drained raisins and stir.
Simmer for about 15 minutes on moderate heat, until the liquid comes out. The ingredients should be well combined and no liquid too much.
Put baking paper on the oven tray, spread the apple mixture and spread it evenly with the help of a knife or spatula to a thickness of 5 mm.
After that, evenly sprinkle vanilla sugar, and set aside.
Biscuit:
Separate the yolks from the whites.
Beat the egg whites with a mixer until foamy, then add the sugar gradually and at the same time beat on high speed.
Then gradually add egg yolks one by one and beat at the same time on medium speed.
At the end, mix the sifted flour with the baking powder with the help of a spatula or hand whisk.
Pour this mixture evenly over the filling and smooth it out.
Bake at 180 °C for about 15 minutes.
When the roll is ready, let it cool 10-15 minutes, then gently and carefully turn over the biscuit, remove the paper, then twist the long side of the dough into a roll.
Trim the uneven ends with a sharp knife. Transfer gently to decorative tray.
Mix honey and jam, coat the top of the roll in a thin layer.
Sprinkle with the rest of the chopped walnuts. As a last resort, you can use powdered sugar instead.

You can also use pears in combination with apples.
Instead of raisins, you can use dried cranberries or simply add a little more walnuts.
Keep covered in a dark, cool place, in the pantry 5 days.
