Apple and cinnamon tart, a very fragrant tart and very easy to prepare. Follow recipe.
Ingredients: 70 min. easy, 22/24 cm mold
For the shortcrust pastry:
350 g flour 00
180 g butter
100 g sugar
1 egg
1 Tablespoon cinnamon powder
1 lemon peel
For the custard:
450 ml milk
140 g sugar
50 g flour 00
2 Tbsp cinnamon powder
3 yolks
For the decoration:
2 apples
cinnamon powder

Preparation:
Short Pastry:
Put the soft butter at room temperature in a bowl together with the sugar and mix with a spoon until creamy. Add the cinnamon, peel lemon and let it absorb. Add the whole egg and mix so that it blends with the butter cream. Gradually add all the 00 flour, mixing first with a spoon and then kneading well with your hands until you get a smooth and homogeneous ball. Roll out the shortcrust pastry between two sheets of parchment paper with a rolling pin and place it in a 22/24 cm diameter tart pan.
Prick the base of the pastry with the tines of a fork.
Cinnamon Custard:
Put the egg yolks and sugar in a bowl and whisk with an electric mixer for a few minutes until the mixture is frothy and whitish. Add the cinnamon and also the 00 flour, continuing to beat with the electric whisk. Add the milk and mix gently with a spoon. Cool, the cinnamon custard covered with cling film.
Apple and cinnamon Tart:
Once the cinnamon custard has cooled completely, place it on the shortcrust pastry base and distribute it, leveling the surface with a spatula. Peel the apples, cut them into 4 parts and remove the core. Cut all the apples into very thin slices and place them on the tart in a radial pattern.
Sprinkle the entire surface of the apple and cinnamon tart with sugar and cinnamon.
Bake the apple and cinnamon tart in a preheated oven at 180 °C for about 35/40 minutes until you see that the shortcrust pastry is cooked and golden. Remove the apple and cinnamon tart from the oven and let it cool completely before removing it from the pan and cutting it. Enjoy in bites!
