Amaretti Biscuits

  • Amaretti are semi-spherical biscuits prepared with almonds, egg whites and sugar. They are a great classic of Italian pastry came from Piedmont, and are usually made in three types: soft, sprinkled with granulated sugar and dry. Follow this classic recipe. Follow recipe.

Ingredients: simple, total time: 60 min.
  • 300 g of granulated sugar

  • 50 g of raw bitter almonds

  • 50 g of sweet almonds

  • 1 bag baking powder/ 10 g or 1/4 teaspoon baking soda

  • vanilla extract to taste

  • 2 egg whites

  • powdered sugar for sprinkle

Preparation:
  1. Put almonds of both types, 150 g of sugar, 1 egg white and vanilla extract in a super chopper, grind it all well. After that, add another egg white to the remaining sugar together with baking powder and grind until you get a fine and consistent mixture. When the mixture is ready, transfer it to a cake syringe with a 13 mm opening.

  2. Place baking paper on an oven tray and form amaretti with a diameter of 2.5 cm in the shape of a ball. Make sure they are far enough apart from each other.

  3. When you have arranged them, run the top of the biscuits with your index finger moistened in water, then sprinkle them with powdered sugar.

  4. Bake the biscuits in a preheated oven at 170 °C for about 15–18 minutes.

  5. When they are done, take them out of the oven and let them cool completely.
