Air Donuts (Mekike)
Preparation:
  1. In the little pot put yeast in lukewarm water, add 1 teaspoon sugar. Let it raise 15 min.

  2. In a deep bowl, pour half the quantity of flour, salt, 5 drops of oil. Mix a little by hand, then add the rest of the flour gradually.

  3. Knead a smooth dough. Flour a little hand and dough.

  4. Knead lightly and superficially, just to form a soft ball of dough. If it sticks to your hands, add a little more flour, knead lightly. Let the dough rise for 15–30 minutes, covered.

  5. Flour the work surface well, knead the risen dough lightly with a little flour. Shake on a table, shape the dough into a ball and roll it out with a rolling pin.

  6. Not too thin roll, do not press hard with a rolling pin so that the holes in the dough do not stick and air does not come out.

  7. From the dough, cut slightly medium rectangles with a knife and cut in the middle with a knife. You will cut the dough easier if you occasionally apply flour on the knife. Leave them for about 10 minutes to rest, covered.

  8. Heat the oil.

  9. Dip your fingertips in the flour each time so that the donuts do not stick. It is also important to take them very lightly, without pressing, because they will flatten.

  10. Put in hot oil, the upper side goes down first. When well browned, turn the other side to brown. Remove to a kitchen paper to drain. Buon appetito!
